Its food pan area is furnished with 30 sixth-size pans, and guided airflow ensures food is kept cold. For corrosion resistance, the evaporator is coated in epoxy, and its condensing unit can be accessed from the back. To efficiently move a high volume of air, this prep table has large fan blades and a high-efficiency evaporator fan motor.

This True TFP-72-30M-FGLID prep table has a stainless steel and aluminum construction, both of which provide corrosion and dent resistance. For structure and cold air retention, its walls are insulated with polyurethane foam, and this prep table has three stainless steel doors with six PVC-coated wire shelves to hold product. Each door has a 12-inch-long recessed handle for comfort and magnetic gaskets to seal cold air inside. An 8-inch-deep cutting board spans the width of the table and offers a space for crafting salads and sandwiches as well as prepping ingredients.
