The True TSSU-27-12M-C-HC mega-top sandwich and salad prep table has a refrigerated base and is heavy duty because of its stainless steel exterior and aluminum, clear-coat interior liner. Its stainless steel floor has coved corners to prevent debris from getting stuck, and to clean under the cabinet, it can be moved with its 5-inch-diameter castors. On top of this unit, a polyethylene cutting board provides a space for preparing meals and toppings, which can be stored in 12 sixth-size containers in a top cutout. Ingredients are kept cold by a foam-insulated lid, and its stainless steel door is hinged on the left side, opening on the right.

The cabinet interior and cutout section are evenly cooled with the help of guided airflow and a factory-balanced refrigeration system. Its set temperature ranges from 33 to 41 degrees Fahrenheit and is regulated by the capillary tube system and R290 hydrocarbon refrigerant. Coated in epoxy, the evaporator resists corrosion, and this True TSSU-27-12M-C-HC prep table has a rear-mounted refrigeration system that is convenient to access. Upon compressor start up, the condensing fan motor reverses for 20 seconds to blow dirt off the condensing coil. A clean coil ensures the unit maintains proper product temperatures and operates using less energy. This feature is self-cleaning, however, routine maintenance should still be performed.
