This True TSSU-36-08-HC food prep table is constructed of stainless steel on the front, top, sides, and doors with a matching aluminum back. To streamline cleaning, the interior is made of a clear-coated aluminum liner and has a stainless steel floor with coved corners. Its stainless steel doors have 12-inch-long recessed handles that are kept permanently in place with a sheet metal interlock, and cold air is trapped inside the cabinet because it is insulated with foamed-in-place polyurethane.

To retain cold air, the top lid and hood on the True TSSU-36-08-HC prep table are insulated. This unit comes with eight sixth-size pans and uses a self-contained, factory-balanced refrigeration system to keep the set temperature between 33 and 41 degrees Fahrenheit. Airflow is evenly distributed throughout the cabinet and pan area with a self-lubricating fan motor and epoxy-coated evaporator.

Lengthening the unit’s lifespan, the condensing coil is kept clean using a reverse condensing fan motor. The fan blows in reverse each time the compressor starts up, ridding the coil of dirt, debris, and dust. This feature doesn’t replace the need for routine maintenance.
