The 8⁷/₈-inch cutting board fitted to the True TSSU-48-12M-B-HC~SPEC3 sandwich and salad prep table creates a comfortable workspace; for a convenient working height, this prep table measures 48³/₈ inches wide by 34¹/₈ inches deep by 40³/₈ inches high. At the top, users can place 12 poly pans to display produce and cold-cut deli slices. So the displayed product remains at optimal serving temperatures, the stainless steel cover is insulated to lock in the cold, reduce condensation, and shield the food from contamination. For simple monitoring, the exterior features a simple-to-discern digital display.

The forced air circulation system below the pans maintains holding temperatures between 33 and 41 degrees Fahrenheit. For an eco-friendly alternative compared to other refrigeration systems, it uses R290 hydrocarbon refrigerant. For efficiency, the evaporator’s fan motors are sealed and self-lubricated with large-size blades. The evaporator’s epoxy coat offers added protection and strength, while the condenser unit is located at the rear and slides without tools for quick access.

The base of the True TSSU-48-12M-B-HC~SPEC3 prep table has two full doors that lock for security, and users can access the interior using each door’s all-metal sturdy handles. The interior cabinet can fit four PVC-coated wire shelves—great for holding excess pans and tools. The front, sides, back, liner, and floor are made of 20-gauge stainless steel, while the interior’s coved corners add a visual flair to ease cleaning.
